Chia seeds are such a nutrient-dense food!
They are a great source of soluble fiber which you can actually see by just how much they gel up when added to liquid. We now know that soluble fiber helps to not only keep us regular but also prevent the compounds that the liver has processed from being reabsorbed back into the body. On top of this, chia seeds are one of the few plant-based sources of anti-inflammatory omega-3 & complete protein.
Ingredients
- 1 1/2 cups coconut milk
- 1/2 cup chia seeds
- 1 tsp vanilla extract
- Papaya
- Punnet of berries
Optional: nut butter, hemp seeds, cocoa nibs, yoghurt.
Method
- Place the coconut milk, chia seeds & vanilla in a jar & shake.
- Leave it in the fridge for 10 minutes to set (or overnight).
- Stir in the morning & serve with papaya, berries & any other desired toppings.
- Chia pudding will keep in the fridge in an airtight container for up to 3 days, making it an excellent great grab & go breakfast or snack!
