Ingredients
- 500g grass-fed organic beef mince (or legumes)
- 1 400g tin of mixed beans
- 1 brown onion or leek, sliced
- 2 carrots, cut into small cubes
- 2 celery stalks, cut into small cubes
- 1 zucchini, grated
- 1 packet of baby spinach, chopped roughly
- 3 garlic cloves, crushed
- 2 x 400ml tins tomato
- 1 bunch basil or parsley, cut finely
- Sea salt & black pepper, to taste
Method
- Heat olive oil or ghee is a large saucepan over medium heat. Add the onion, celery & carrot to the saucepan & saute for around 3 - 5 minutes or until the onion is brown. Add the mince, spinach, zucchini & garlic to the pan. Saute for 2 - 3 minutes. Add the remaining ingredients into the saucepan & simmer for 10 minutes.
Nutritionist note: This mix is such a great way to get more vegetables into your diet (especially if you have kids). It’s a great base for weekday dinners & can be frozen to have on hand for busy days. Here are my favorite ways to use this mix.
Variation #1: Shepards Pie
Extra Ingredients
- 2 sweet potato, peeled & roughly chopped
- Optional goats cheese or parmesan
Method
- Preheat the oven to 180C
- Place the sweet potato in a saucepan & cover with water. Place on the stove over medium heat & boil until the sweet potato is soft.
- Strain the sweet potato & mash in a bowl.
- Pour the vegetable mince filling into an ovenproof tray, top with mashed sweet potato & a sprinkle of quality cheese.
- Cook for 15 minutes or until the top is golden.
Variation #2: Zoodle Bolignaise
Extra Ingredients
- 1 - 2 large zucchini, spiralised
- Optional: goats cheese
Method
- Heat the mince mixture in a saucepan for 5 - 10 minutes or until warm.
- Serve on spiralized zucchini
- Top with quality goats cheese
Variation #3: Mexi Bowl
Extra Ingredients
- 1 avocado, diced
- 1 cucumber, diced
- ½ punnet cherry tomatoes, halved
- ½ lime
- Handful of spinach
- Sweet potato, cubed & roasted
Method
- Heat the mince mixture in a saucepan for 5 - 10 minutes or until warm.
- Meanwhile, mix the avocado, cucumber & cherry tomatoes in a bowl. Add a squeeze on lime juice.
- Serve up your mexi bowl with the mince mix, avocado salsa, spinach & sweet potato.
